Ingredients
4-5fresh passion fruitsequivalent to 1/2 cup or store-bought passion fruit juice
2eggsat room temperature
1/2cuphoneyplus 3 tablespoons for topping
100gramsor 7 tablespoons butter
1/2cupcoconut milk
3/4cupall-purpose flour
1teaspoonvanilla extract
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the butter and 1/2 cup of honey until smooth.
Add the eggs one at a time, beating well after each addition.
Stir in the coconut milk and vanilla extract, and continue to beat until the mixture is well combined.
Gradually add the flour, mixing well until the batter is smooth.
Transfer the batter into an oven-safe baking pan.
In a separate bowl, mix the passion fruit pulp with the remaining 3 tablespoons of honey.
Pour this passion fruit mixture over the top of the batter in the baking pan.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
