How to make Tamarillo Mojito with a Hibiscus Kick

This vibrant mojito is a simple yet impressive summer drink. The sweetness of the brown sugar balances the tartness of the tamarillo and lime, while the mint adds a refreshing touch. The sparkling water creates a light and bubbly texture, and the hibiscus ice cubes add a beautiful pop of color and a subtle floral hint.

Ingredients

  • 2 ripe tamarillos
  • 1 cup sparkling water
  • 2 tablespoons brown sugar
  • 2 limes cut into wedges
  • Fresh mint leaves
  • 1 shot rum optional

For the hibiscus ice cubes:

  • 1/2 cup dried hibiscus flowers
  • 1 cup water

Instructions

  • Make the hibiscus ice cubes:  Steep the hibiscus flowers in hot water for 10 minutes. Strain and pour into ice cube trays, freeze for at least 4 hours.
  • Muddle the mint and sugar:  In a highball glass, muddle the mint leaves with the brown sugar until fragrant.
  • Add tamarillo and lime:  Chop the tamarillos and add them to the glass with the lime wedges. Muddle gently to release the juices.
  • Fill with fizz:  Add the rum (if using) and then fill the glass with ice cubes, including a few hibiscus cubes for the visual wow.
  • Top and garnish:  Top with sparkling water and stir gently. Garnish with additional mint leaves.

  • Adjust the sweetness: Depending on the ripeness of your tamarillos, you may need to adjust the amount of brown sugar. Taste as you go and add more if desired.
