Ingredients

  • 1 tablespoon ground flaxseeds
  • ½ cup unsweetened oat milk
  • ¼ cup roasted unsalted pecans
  • 1 cup Medjool dates pits removed
  • cup cocoa powder
  • ¼ cup almond or peanut butter
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon espresso coffee optional
  • ¼ teaspoon salt
  • cup dark chocolate chips

Instructions

  • Preheat your oven to 350ºF (180°C). Grab a big bowl and mix together the ground flaxseeds and oat milk. Let it sit for a bit.
  • In a food processor, blend those roasted pecans and dates until they're smooth and sticky.
  • Add the nutty date mixture to the bowl with the flaxseed mix. Toss in all the other ingredients too. Stir it all up until everything's well combined.
  • Get out your silicone baking cups or mini muffin tins. Spoon the batter into each cup. Pop them in the oven and bake for 25-30 minutes until the tops are firm and a toothpick comes out clean.
  • Let them cool for a few minutes before you dig in. Enjoy your fudgy brownie bites!

  • Store your brownie bites in an airtight container in the fridge for up to 4 days. They can also hang out in the freezer for up to 1 month.
  • Want to mix it up? Instead of chocolate chips, chop up your favorite dark chocolate into small pieces.
  • Don't have baking cups? No problem. Use a  baking dish instead and slice them into squares after they've cooled down.
  • You can swap out pecans for other nuts if you like, but trust me, pecans are pretty tasty in these brownies.
