Cook the Corona beans in a pressure cooker according to the manufacturer's instructions. Set aside.
Heat some olive oil in a large pan, then sauté the leeks until they are soft and translucent.
Add a bit more olive oil to the pan, then add the sliced shiitake mushrooms, chopped black olives, sun-dried tomatoes, and pickled roasted bell peppers. Cook and stir for 5-10 minutes.
Add the cooked Corona beans to the pan, followed by the fresh basil and homemade vegetable broth.
Season the mixture with your homemade passion fruit spice mix.
Cover the pan and let it simmer for 20 minutes.
