Delight in the flavors of our Corona Beans and Vegetable Medley, where tender Corona beans harmonize with a medley of sautéed vegetables and a dash of homemade passion fruit spice mix. Serve this versatile dish on toasted bread, generously garnished with fresh basil, for a satisfying main course or a delightful pasta topping.

Ingredients
  

  • 1 cup Corona beans
  • 1 leek
  • 1 cup shiitake mushrooms sliced
  • 1/2 cup black olives chopped
  • 1/2 cup homemade sun-dried tomatoes
  • 1/2 cup roasted bell peppers pickled
  • 2 cups homemade vegetable broth
  • Fresh basil for garnish
  • Passion fruit spice mix from the book “50 Passion Fruit Recipes from Marzi’s Garden”
  • Toasted bread for serving

Instructions
 

  • Cook the Corona beans in a pressure cooker according to the manufacturer’s instructions. Set aside.
  • Heat some olive oil in a large pan, then sauté the leeks until they are soft and translucent.
  • Add a bit more olive oil to the pan, then add the sliced shiitake mushrooms, chopped black olives, sun-dried tomatoes, and pickled roasted bell peppers. Cook and stir for 5-10 minutes.
  • Add the cooked Corona beans to the pan, followed by the fresh basil and homemade vegetable broth.
  • Season the mixture with your homemade passion fruit spice mix.
  • Cover the pan and let it simmer for 20 minutes.
  • Serve the Corona Beans and Vegetable Medley on toasted bread, garnished with fresh basil. Enjoy!

Notes

1. Cooking the beans in a pressure cooker not only saves time but also ensures they are perfectly tender.
2. Feel free to substitute or add any vegetables of your choice. This recipe is versatile and can be customized to your liking.
3. The passion fruit spice mix adds a unique flavor to the dish. However, if you don’t have it, you can use any other spice mix of your choice.
4. This dish can be served as a main course or a side dish. It also makes a great topping for pasta or rice.
5. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat before serving.
