Garden Fresh Passion Fruit Delight

This Garden Fresh Passion Fruit Delight is a sweet, tangy, and tropical treat that's perfect for any occasion.

Ingredients
  

  • 4-5 fresh passion fruits equivalent to 1/2 cup or store-bought passion fruit juice
  • 2 eggs at room temperature
  • 1/2 cup honey plus 3 tablespoons for topping
  • 100 grams or 7 tablespoons butter
  • 1/2 cup coconut milk
  • 3/4 cup all-purpose flour
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter and 1/2 cup of honey until smooth.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the coconut milk and vanilla extract, and continue to beat until the mixture is well combined.
  • Gradually add the flour, mixing well until the batter is smooth.
  • Transfer the batter into an oven-safe baking pan.
  • In a separate bowl, mix the passion fruit pulp with the remaining 3 tablespoons of honey.
  • Pour this passion fruit mixture over the top of the batter in the baking pan.
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Remember, for the best results, ensure your eggs are at room temperature before you start, and don’t rush the creaming process – it’s key to a light, fluffy texture. Enjoy!
